Living in the spirit of hot summer days, I want to share a popular drink that reminds me of hot sunny days in my hometown. “Papelon con Limon” is a popular drink in Venezuela and other Latin American countries, although the name varies. In Colombia is known as Aguapanela. “Papelon con limon” is basically a limeade sweeten with a raw piece of sugar cane, also known as “piloncillo” or “panela”.

The elaboration of piloncillo requires the juice obtained from sugar cane to be cooked at high temperatures until it forms fairly dense molasses, then its pour in rectangular or cone molds where it solidifies. You can find it in Latin, Asian, or Indian stores here in Madison, and sometimes in the international aisles on your regular supermarket.

This refreshing drink is usually made with limes only, but I like to combine the tartness of limes with the sweetness of lemons. It is very easy to prepare and incredible delicious. There is no better alternative to spend a hot afternoon than sitting on my deck with a tall glass of Papelon con Limon!

Ingredients:
(Serves 6)

  • 5 oz. of papelon (piloncillo, or panela)
  • 1 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 6 cups water
  • Lime or lemon slices for garnishing (optional)
  • Ice

In a small pan bring 2 cups of water to a boil. Using a cheese grater, shred the papelon.  When the water is boiling, add the grated papelon or piloncillo to the pan, turn the heat off, stir with a spoon and let it sit for few minutes until the papelon or piloncillo is completely dissolved. Strain to a serving jar, add the lime and lemon juices, add 4 more cups of water, stir. Serve over ice and garnish with lime slices. Enjoy!
